I made this vegan no bake cheesecake for my hubby’s birthday and it was a hit in our house!! It looks long and tedious but it is very easy to assemble and tastes absolutely yum!! Do try it!!
Mango Passion Fruit Layered Vegan Cheesecake

No Bake, Vegan, Gluten Free Recipe for Cheesecake
Ingredients
- Cheesecake Crust
1 cup Pitted Dates
1 cup Any Chopped Nuts and Seeds
2 tbsp Oats
1 tsp Cardamom Powder
- Cheesecake Filling
1.5 cup Soaked Cashews Soaked in hot water for 40 mins
1/4 cup Maple Syrup
Pinch Salt
2/3 cup Coconut Cream Refrigerated Overnight
2 tsp Cardamom Powder
- Mango Passion fruit Layer
1 cup Mango Puree
1 cup Passion Fruit Puree Canned or Blend fresh/frozen fruit
1/4 cup Agave/Maple Syrup
1 tsp Agar Agar
- Top Layer
1 Mango Thinly Sliced
10 Strawberries Thinkly Sliced
Directions
- Crust
- In a food processor add the dates and pulse a couple of times then add 1 tsp cardamom and nuts. Pulse till well combined
- Take an 8-inch spring form pan, grease it well or line it with parchment/cling film.Press the crust mix above using the back of a glass.
- Freeze the pan for at least 30 mins.
- For Filling
- In a high-speed blender or food processor add the remaining cheesecake layer mix and blend till smooth.
- Add it to the frozen crust
- Freeze again for 4 hours
- For Fruit Layer
- In a saucepan on medium low heat, add the Mango and Passion fruit puree and bring it to a slow boil. Once it starts bubbling and in a slow boil(it needs to be higher than 85 F for the agar agar to dissolve) add agar agar and stir on a low heat for a min or so.
- Once dissolved take it of heat, add the maple syrup and taste for the sweetness. Add more if needed.
- Cool for a 10-15 mins, then add to the top of the cheesecake layer and freeze for 3-4hours.
- Decorate with thinly sliced Mango and Strawberries
- Enjoy!
